Berry Glow Pancakes

No weekend is complete without homemade pancakes – and these ones are a real winner. Topped with a homemade berry coulis, they pack a nutritional punch and contain hidden vitamins and minerals!

First up, make your berry coulis by adding the berries, OJ and maple syrup to a saucepan. Bring to a boil then reduce to a simmer for a deliciously sweet but tart topping for your pancakes. Next, combine the dry ingredients for the pancakes, then add in the wet ingredients and mix well until there’s no lumps.
