Created by Healthy Luxe, this delicious (and healthy!) Raw Choc Acai Slice combines two of our favourites foods – berries and chocolate! It's a match made in heaven!
It's perfect for whipping up as a clean midweek treat or if you want to impress friends and family with a decadent but nutritious dessert. The base is made from a mix of nuts, shredded coconut, dates, cacao powder and buckinis, while the tasty chocolate middle layer gets is rich, velvety texture from cashews and coconut cream.

Firstly, prepare the blueberry coulis. Combine coulis ingredients in a saucepan and place over medium heat. Simmer for approx. 5 minutes, stirring occasionally. Set aside and allow to cool.
Combine all ingredients for the base in a high power blender and blend until smooth. Press into the base of a greased and lined spring form cake tin and set aside while you make the chocolate layer.
Drain and rinse soaked cashews and place in blender with remaining ingredients for the chocolate layer, blend until smooth and creamy. Spoon on top of the base and place in the freezer for at least 30 minutes.
Once the cake has slightly set, spread coulis on top of the chocolate layer and return to freezer.
Combine all ingredients for the blueberry layer in blender, blend until smooth and creamy.
Spoon on top of the blueberry coulis and return to freezer for 4-5 hours or until set.
Allow to thaw before serving and serve with fresh blueberries and/or a drizzle of melted chocolate.
